What does Mercury mean in astrology?

Mercury is the planet of the mind. Because Mercury never strays more than about 28 degrees from the Sun, it is always in your Sun sign or one of the two neighbouring signs, so a Leo Sun can only have Mercury in Cancer, Leo or Virgo.
